Midbar Winery was founded in 2012 and is firmly focused on keeping interventions to a minimum in winemaking. They primarily invest their energy in physical processes of cooling, long fermentations, and mixing. As a boutique winery, they can direct acute attention to each variety of grape, and each distinguished phase of harvesting.
Wines are made from desert vineyard grapes, mainly grown in the Mitzpe Ramon area, at an altitude of 800 m above sea level. The characteristics of the area include absolute aridity and strict irrigation regime. The sharp differences in temperature between day and night, winter and summer; extreme solar radiation; minerality of the loess and limestone rocks; and sparse use of pesticides, together preserve the natural freshness and complexity of the grape reflected in the distinct wine. The wine is high quality, accessible and tasty to drink. It is balanced, clean, and perfectly reflects the desert.
The winery is Kosher Mehadrin under the supervision of the Chief Rabbinate of Arad and Rabbi Dov Landau. The wine is also kosher according to Maimonides’ opinion – meaning it is 100% grape juice with no additives from the animal species.
Wine tasting, meeting the winemaker, wine and culinary workshops are all available. Near the winery there are hiking trails and a variety of outdoor desert activities.
